Cottage Cheese: I’m Crazy About the Curds . . .
I am pretty much a full-fledged dairy girl. Milk . . . cheese . . . butter . . . yogurt . . . It’s all good! In fact, I love dairy products so much that I would rather suffer the ill-effects of lactose intolerance than turn down a bowl of ice cream. Oh, yeah, totally worth the stabbing stomach cramps!
One of my favorite dairy products, however, is cottage cheese. Husband just doesn’t get this. “Isn’t that just curdled milk?” he asks. My reply? “So what’s your point?”
Besides eating cottage cheese plain, I also like to put it on a baked potato (Just did that for lunch today!) or mix it in with baked beans (a delicacy I learned about from my father-in-law). When I was growing up, my all-time favorite snack was to use Cool Ranch Doritos to scoop up cottage cheese. Mmm… I’m not kidding, I would eat an entire bag of Doritos and a whole big container of cottage cheese in one sitting. (Back when I still had metabolism.)
My friends at BSM Media sent me some coupons and recipes to try, courtesy of Roberts Dairy. Roberts is headquartered in Omaha, only two hours from me, and is farmer-owned. I grew up on a farm, so that’s definitely a plus for me! And get this—every week, they process and fill more than 900,000 gallons of milk and juice! Those are some busy bovines! They also use NO artificial growth hormones, so I don’t have to worry about what kind of wacky things they’re going to do to me or my kids, like make me sprout chest hair or make my youngest go through puberty before he even learns to tie his shoes.
As you can imagine, I nearly shrieked with joy when my envelope of goodies arrived. (Skim milk and sour cream and chip dip—oh my!) Because, remember, I am not winning Mother of the Year any time soon, I haven’t had a chance to try one of the recipes yet because I haven’t actually planned a meal in what seems like, well, forever. But a certain recipe with—yes, you guessed it—cottage cheese caught my eye right away, and I’m planning (Did that word just come out of my mouth?) to make it later this week for the boys.
Chicken Enchiladas with Cottage Cheese (Get the recipe here)
As an added bonus, I want to give you one of my mom’s many awesome recipes. This is perfect for a summer picnic or potluck. It’s easy. It’s quick. It’s inexpensive. It’s super-yummy . . . And it contains cottage cheese.
Mom of 3 P’s Dry Jello Salad
Ingredients: 1 regular box orange JELL-O (Do not actually make the JELL-O; just use the powder)
1 8 oz. carton cottage cheese
1 small carton Cool Whip
3/4 c. crushed pineapple (drained)
1 1/2 c. mini marshmallows
3/4 c. mandarin oranges
Combine all of the ingredients and spread in a 9 X 13 pan. Refrigerate several hours before serving.
The nice thing about this recipe is that you can change it up according to your tastes or what’s in your pantry. You can use about any flavor JELL-O and can substitute peaches, cranberries, or other types of fruit for the mandarin oranges.

I'm thinkin' it will make a good addition to the "Christmas" list. I'll have to try them someday when it cools down and I feel like I can use my oven again.
I am not a big fan of cottage cheese, but will eat it with my salads. It is yummy then. Chips and cottage cheese…interesting. lol
The recipe sounds good though, I might have to try it out.
